What happens in vacuum-frying?

The technology behind vacuum-frying is based on the concept that the boiling point of the liquid (in this case, oil) decreases at low pressure. And that’s not just it, it also results in very low oil absorption and oil degradation. Once the frying is done, the vegetable/fruit crisps are de-oiled to further reduce the oil content. This makes vacuum-fried snacks have 50% less oil when compared to foods that are fried the usual way.
Since the oil does not decompose readily at the low temperatures that vacuum-frying is done in, it also results in the production of fewer cancer-causing substances. Frying under the combination of low heat and high pressure makes the vegetables superbly crisp and light, thus intensifying the light-snacking experience.
